Cauliflower mash: a low starch and low calorie nutritious alternative to potatoes.
Boil cut up cauliflower in water for 6 minutes. Drain and dry. Save the liquid!
Bake 3-4 garlic cloves in toaster oven for 10 minutes.
Purée cauliflower and garlic in food processor/blender, with 1 tablespoon olive oil and some of the reserved water.
Season to taste with ground pepper and sea salt!
Next time I will be sure to incorporate some rosemary or chives for extra flavoring!
